= Recipe
1. Bake 3 potatoes at 400°F for 1 hour. Halve and scoop flesh into a bowl.
2. Fry 6 slices bacon. Chop into bits. Reserve 1 tbsp bacon grease.
3. Dice 0.25 cup yellow onion and mince 2 cloves garlic.
4. In a pot, heat reserved bacon grease and melt 4 tbsp butter. Cook onion for 5 minutes. Add garlic and 0.333 cup flour. Stir to eliminate clumps and cook for 1 minute.
5. Slowly incorporate 2 cups low fat milk and 1 cup half and half, then 2 cups chicken broth. Add 1 tsp salt, 0.5 tsp pepper, and 0.5 tsp garlic powder. Bring to a simmer for 5 minutes.
6. Reduce heat. Add bacon and 2 cups shredded cheddar. Once melted, add potato flesh and heat for a few minutes.
7. Serve topped with 1 cup sour cream, additional cheddar, bacon, and green onion.
