1. Cook 1 lb chorizo sausage in a pan. Sauté onions, then add 1 can green chiles. Add 1 package frozen O'Brien hash browns. Cook through. Reserve mixture.
2. Cook 1 lb bacon, cut into 1/2-inch strips. Add remaining 1 package frozen O'Brien hash browns and cook through.
3. Scramble 24 eggs in batches and season with salt and pepper.
4. Assemble 8 chorizo burritos: fill 8 large flour tortillas with chorizo mixture, egg, and tillamook grated cheese.
5. Assemble 8 bacon burritos: fill 8 large flour tortillas with bacon, potato, egg, and tillamook grated cheese.
6. Serve with sour cream and salsa.
