= Recipe
1. Preheat the oven to 375°F. Coat a 3-quart baking dish with cooking spray.
2. Melt 3 tbsp butter in a large pan over medium heat. Add 1 tsp minced garlic and cook for 30 seconds. Whisk in 2 tbsp flour and cook for 1 minute.
3. Pour in 2 cups whole milk and 1 cup heavy cream, then simmer, whisking constantly, until sauce has just thickened. Add 0.75 cup parmesan cheese, grated, and 0.5 cup mozzarella cheese, shredded, along with salt and pepper to taste. Stir until cheese has melted.
4. Place 12 oz penne pasta, cooked in salted water according to package directions, and 3 cups cooked chicken, diced, in a large bowl. Pour the sauce over the top and toss to coat evenly.
5. Pour the pasta mixture into the prepared pan and top with remaining 1.5 cups mozzarella cheese, shredded. Bake uncovered for 20 minutes or until pasta is bubbly and cheese has just started to brown. Sprinkle 1 tbsp parsley, chopped, over the top, then serve.
