1. Make the dressing: Add 0.5 cup plain Greek yogurt, 0.25 cup fresh lime juice, 0.25 cup cilantro, roughly chopped (leaves and stems are ok), 2 garlic cloves, 0.5 tsp salt, and 0.125 tsp cayenne to a food processor and blend until smooth. Cover and refrigerate.
2. Cook 16 oz bow tie pasta according to package directions. Drain and cool.
3. Add the cooled pasta, 1.5 cups corn kernels (about 2 ears), 1.5 cups cherry tomatoes, halved, 0.5 small red onion, chopped or thinly sliced, and 2 tbsp cilantro, finely chopped, to a large bowl. Pour your desired amount of dressing over the top and toss until fully coated.
4. Top each individual portion with 1-2 avocado, diced, and cotija cheese (optional) and serve immediately.
