1. Cook 0.25 cup white onion, chopped, in a pan for a few minutes until translucent. Add 1 whole garlic clove.
2. Add 1 cup rice, washed and dried, and toast until golden. Add 2 cups water and wait until boiling.
3. Cover and cook on medium for 5 minutes, then reduce to a low simmer for 10 minutes.
4. Mix in 1.5 tbsp lime juice (fresh or concentrated) and 4 oz fresh cilantro, finely chopped. Fluff with a fork. Cover again for 5 minutes. Season with 0.5 tsp garlic salt and serve.
