1. Preheat oven to 375°F. Season 1.5 lb boneless, skinless chicken breast with salt and pepper and place on a baking sheet. Bake for 20-25 minutes or until fully cooked. Let cool.
2. In a large bowl, whisk together 0.25 cup mayonnaise, 2 tbsp Dijon mustard, 1 tbsp whole-grain mustard, 2 tbsp minced shallot, 2 tbsp chopped fresh tarragon, 1 tbsp chopped fresh thyme, and 1 tbsp lemon juice.
3. Shred the cooled chicken and add it to the bowl along with 0.5 cup thinly sliced radishes and 0.25 cup chopped cornichons. Toss to combine.
4. Serve on top of 4 cups mixed greens.
