1. Cook 2 packs instant ramen according to package directions. Reserve 1/2 cup of the cooking water, then drain noodles and set aside.
2. In a bowl, whisk together the seasoning packets from the ramen, 2 eggs, 2 tbsp kewpie mayo, 2 tbsp peanut butter, 3 garlic cloves (minced), spring onion (chopped), and 1 tsp sesame oil. Thin with the reserved 0.5 cup cooking water and mix until smooth.
3. Toss cooked noodles with the peanut sauce. Garnish with extra spring onion, chili oil, and sesame seeds.
