1. Heat 1 tbsp olive oil in a large skillet over medium heat. Add 0.5 cup onion (diced) and sauté until softened, 3 minutes. Add 1.5 lbs ground beef and cook, breaking up, until browned. Drain excess fat. Add 2 tbsp garlic (minced) and season with 1 tsp salt and 0.5 tsp pepper.
2. Add 2 cups marinara sauce, 2 cups water or stock, and 2 cups medium shells. Stir to combine. Bring to a boil, then cook uncovered, stirring occasionally, 10 minutes until pasta is tender and most liquid is absorbed.
3. Add 2 tbsp Italian seasoning and stir to combine. Reduce heat to low and stir in 1 cup heavy cream. Fold in 0.5 cup shredded Parmesan and serve.
