1. Adjust the oven racks to the lower- and upper-middle positions and preheat the oven to 425°F. Arrange 24 slices bacon (about 1 pound) in a single layer on two rimmed baking sheets. Roast the bacon until it's crisp and brown, 18-20 minutes, rotating the pans back to front and top to bottom halfway through cooking.
2. Drain the bacon on a paper-towel-lined plate and serve.
