1. Slice 1 large cucumber paper-thin. Toss with 0.25 tsp salt and let sit 5 minutes to draw out moisture. Squeeze out excess water with your hands.
2. Whisk together 3 tbsp rice vinegar, 1 tbsp sesame oil, 1 tbsp soy sauce, 1 tsp maple syrup, and 1 tsp toasted sesame seeds.
3. Toss cucumbers with dressing. Serve immediately or let marinate 15 minutes for more flavor.
