1. Place 8 hard-cooked eggs in a large bowl. Add 0.5 cup mayonnaise, 1 tbsp Dijon mustard, 2 tsp Tabasco, 0.5 tsp salt, and 0.5 tsp pepper. Using a pastry cutter, chop and mix until egg whites are rough 1/4-inch pieces and yolks are blended into the dressing.
2. Stir in 0.25 cup minced celery (optional), 0.25 cup chopped dill pickles, and 10 Mama Lil's peppers (chopped). Taste and adjust seasoning. Serve on bread or crackers.
