= Recipe
1. Preheat oven to 400°F. Cut the top off a 1 head of garlic, drizzle with 1 tbsp olive oil, wrap in foil, and roast 45 minutes until cloves are golden and soft. Squeeze cloves out of skins.
2. Mash roasted garlic with 0.5 cup vegan butter (softened), 1-2 tbsp gochujang, and 2 tbsp vegan Parmesan (optional) until combined.
3. Slice a 1 loaf of French bread in half lengthwise. Spread the garlic butter mixture over both cut sides. Top with 1 cup vegan mozzarella. Bake at 400°F 10-12 minutes until cheese is melted and edges are golden. Top with sliced chives before serving.
