1. Mix together 0.25 cup shortening (50g), 1 egg, 120 g white sugar, 80 g brown sugar, and 2 ripe bananas (about 300g) until combined.
2. In a separate bowl, mix 2 cups all-purpose flour (295g), 0.5 tsp baking powder, 0.5 tsp baking soda, and 1 tsp salt (3g, heaping).
3. Mix dry ingredients into wet. Add 3 tbsp buttermilk (or 1.5 tbsp milk + 1.5 tbsp apple cider vinegar) and fold in until just combined.
4. Bake for 40 minutes at 350°F in a loaf pan, or 16 minutes for muffins, until a toothpick comes out clean.
