= Recipe
1. Preheat oven to 400°F. Add 0.75 cup dry orzo, 1 cup dry white rice, 1 lb ground beef, 1 zucchini (shredded), 2 bell peppers (diced), 1 small yellow onion (diced), 1 jalapeño (minced), 2 cups broth, 2 tbsp taco seasoning, 2 cans white beans (drained), 12 oz salsa verde, and 1 4-oz can green chiles to a 9x13 baking dish. Mix well to combine. Top with 4 tbsp vegan butter (cut into slabs).
2. Cover tightly with foil and bake 30 minutes. Remove foil, stir, re-cover, and bake an additional 10-30 minutes until rice and orzo are tender. Season with salt to taste.
3. Serve topped with yogurt, green onion, cilantro, tortilla chips, and a squeeze of lime.
