1. Combine 1 lb boneless skinless chicken thighs or breasts with 2 garlic cloves (minced), 1 tbsp lime juice, 1 tbsp olive oil, 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, 1 tsp salt, 0.5 tsp dried oregano, 0.25 tsp black pepper, and 1 tsp cornstarch (optional, for extra crispness) in a bag or bowl. Toss to coat and marinate for at least 15-30 minutes, or up to 24 hours in the refrigerator.
2. Grill on medium-high heat for 6-7 minutes per side until internal temperature reaches 165°F. Let rest a few minutes before slicing. Use in tacos, burritos, salads, or rice bowls.
