1. Pour 2 quarts water into a lidded 3 qt saucepan and bring to a boil over high heat.
2. Carefully lower 1-6 large eggs into the water and cook for 30 seconds.
3. Add 12 ice cubes and allow the water to return to a boil.
4. Reduce to a sub-simmer, about 190°F. Cook for 11 minutes. Drain the eggs and peel under cool running water.
