1. Preheat oven to 375°F. Cut 0.75 cup cold unsalted butter (170g) into the 3.333 cups all-purpose flour (425g) along with 1 tbsp baking powder and 2.5 tsp kosher salt until the mixture resembles coarse crumbs.
2. Add 1.25 cups cold buttermilk (300g) and fold until just combined. Optionally fold in 0.5 cup shredded cheddar cheese and 1 jalapeño (sliced).
3. Turn out onto a floured surface and roll to about 3/4" thick. Cut into biscuits and place on a parchment-lined baking sheet. Brush tops with 1 egg (beaten).
4. Bake for 35 minutes until golden.
