1. Cook 1.5 lbs Jimmy Dean sausage in a skillet over medium heat, breaking it up until browned. Drain and set aside. In the same pan, cook 1 red bell pepper (diced), 1 green bell pepper (diced), and 1 onion (diced) until softened. Set aside.
2. In a large bowl, whisk together 12 eggs, 0.25 cup milk, 1 cup sour cream, and 2 cups shredded cheddar. Stir in the cooked sausage, vegetables, and 4 scallions (diced).
3. Layer 0.5 bag frozen hash browns in a greased baking dish, spreading to about 1/2 inch thick. Pour the egg mixture over the top. Let sit overnight if possible for best results.
4. Bake at 350°F for 1 hour 15 minutes until set in the center and golden on top.
