1. Preheat oven to 375°F. In a skillet, melt 2 tbsp unsalted butter over medium heat. Add 2 medium leeks (white parts only, washed and cut into 1/2-inch dice, about 2 cups) and sauté 5-7 minutes until softened. Let cool slightly.
2. In a bowl, whisk together 2 large eggs, 2 large egg yolks, 0.75 cup whole milk, 0.75 cup heavy cream, 0.5 tsp salt, 0.5 tsp white pepper, and a pinch of nutmeg.
3. Scatter 4 oz mild goat cheese (broken into 1/2-inch pieces) and the cooked leeks in a warm 1 prebaked pie shell. Pour the custard mixture over the top to about 1/2 inch below the rim.
4. Bake 32-35 minutes until just set but still slightly soft in the center when gently shaken. Cool on a wire rack before slicing.
