= Recipe
1. In a large pot, heat olive oil over medium heat. Add 6 potatoes (roughly chopped) and 3 leeks (sliced into 1/2-inch rounds, washed well) and 1 white onion. Sauté 12 minutes, stirring occasionally, until starting to soften.
2. Add 7 cups broth and bring to a boil. Reduce heat and simmer 20 minutes until potatoes are completely tender.
3. Blend with a stick blender (or in batches in a blender) until smooth and creamy. Season with salt and pepper to taste. Serve hot.
