1. Thinly slice 2 hearts of romaine and dry thoroughly (a salad spinner works well). Transfer to a large bowl.
2. Whisk together 0.5 cup extra virgin olive oil, the juice of 1 large lemon, and 0.25 tsp salt to make the dressing.
3. Add 4-5 scallions (finely diced), 1 bunch fresh dill (chopped), and 4 oz crumbled feta to the lettuce. Drizzle with dressing, then toss and gently massage everything together. Serve immediately.
