1. Preheat oven to 400°F. Soak 4 white bread slices (cut into 1-inch pieces) in 0.5 cup milk and set aside.
2. In a skillet, melt 1 tbsp butter over medium heat. Sauté 1 onion (diced) 5 minutes. Add 6-7 garlic cloves (minced) and cook 1 minute more. Let cool slightly.
3. In a large bowl, combine 2 lbs ground beef, the soaked bread, 2 eggs, 2 tbsp tomato paste, 1 tbsp Worcestershire sauce, 1 tbsp Dijon mustard, 1 cup shredded Parmesan, 1 tsp salt, and 1 tsp black pepper. Add the cooked onion and garlic and mix until just combined.
4. Shape into a loaf on a broiler pan or press into a loaf pan. Bake 40 minutes.
5. Meanwhile, mix together 0.5 cup ketchup, 1 tbsp tomato paste, 2 tbsp brown sugar, 1 tsp apple cider vinegar, 1 tsp Worcestershire sauce, 1 tsp garlic powder, and 1 tsp onion powder to make the glaze.
6. After 40 minutes, brush the meatloaf generously with the glaze. Return to oven and bake an additional 20-30 minutes until the internal temperature reaches 160°F. Let rest 10 minutes before slicing.
