1. Boil 12 oz linguine until al dente. Reserve 2 cups pasta water, then drain.
2. In a large skillet over medium-high heat, brown 1 lb ground beef with 4-5 garlic cloves (minced), breaking up the meat. Drain excess grease if needed. Add 1 tsp ginger, 0.25 cup soy sauce, 0.25 cup brown sugar, pinch red pepper flakes, 3 tbsp hoisin sauce, and 0.5 tsp black pepper. Stir to combine.
3. Mix 1 tbsp cornstarch with 2 tbsp cold water until smooth. Stir into the meat mixture and cook a few minutes until thickened. Stir in 1 cup pasta water and the cooked pasta. Toss everything together well.
4. Garnish with sliced green onions and sesame seeds if desired. Serve hot.
