1. In a cocktail shaker, muddle 6 fresh mint leaves with 1 oz simple syrup and 0.75 oz fresh lime juice. Add 1.5 oz aged rum and 2 dashes Angostura bitters along with ice. Shake until well-chilled.
2. Double-strain into a coupe glass. Top with 2 oz chilled Champagne and garnish with a mint sprig.
