1. For the dressing, combine 2 garlic cloves, 2 tbsp red wine vinegar, 1 egg (whole), 1 egg yolk, 2 tbsp lemon juice, 1 tbsp Dijon mustard, 1 tsp Worcestershire sauce, 1 tbsp fresh or dried tarragon, 1 tsp salt, 0.5 tsp black pepper, and 0.5 tsp sugar in a blender and blitz until well combined. With the blender running on high, slowly drizzle in 0.667 cup extra virgin olive oil to emulsify.
2. Combine 1 head chopped green leaf lettuce, 1 can garbanzo beans (drained and rinsed), 1 red bell pepper (sliced into thin 1-inch strips), 0.5 red onion (chopped), 1 cup shredded Parmesan, and 0.5 lb salami (diced into 1/4-inch cubes) in a bowl. Toss with dressing and serve.
