= Recipe
1. Place 115 g unsalted butter in a heatproof bowl and microwave until just melted. Allow to cool slightly.
2. Add 90 g brown sugar, 50 g granulated sugar, 1 tsp vanilla extract, and 1 large egg and stir until smooth. Add 210 g plain flour, 0.5 tsp baking soda, and 1 pinch salt and stir until a soft cookie dough forms. Add 75 g chopped dark or milk chocolate and 150 g Rolo chocolate (roughly chopped) and stir until combined.
3. Chill cookie dough in the fridge for at least 1 hour.
4. Preheat oven to 180°C (350°F). Line two baking trays with parchment paper. Roll large balls of dough and place on trays. Bake for 9-10 minutes. While still warm, press extra chopped Rolos on top. The cookies will look underbaked — this ensures they stay soft and chewy once cooled.
