1. Bring a large saucepan of salted water to a boil.
2. Heat a large nonstick skillet over medium. Cook 8 oz bacon turning occasionally until golden and crispy, 7-8 minutes. Transfer to a paper towel-lined plate; chop into bite-size pieces.
3. Meanwhile, add 10 cups broccoli florets (1½ lbs, cut into 1–1½ inch pieces) to the boiling water and cook until bright green, 1 minute. Rinse under cold water until cool, then drain well and pat dry.
4. In a large bowl, combine 1 cup mayonnaise, 0.25 cup finely chopped red onion, 2 tbsp apple cider vinegar, and 1 tbsp granulated sugar and mix well. Add the broccoli, 1 cup coarsely grated Cheddar, 0.5 cup golden raisins, and 0.5 cup roasted salted sunflower seeds. Season with salt and pepper and toss to combine. Refrigerate 30 minutes if time allows.
5. Transfer to a serving bowl and top with the bacon.
