= Recipe
1. Add 1 cup red lentils, 2 handfuls fresh spinach (or 2 frozen cubes), 2 handfuls cherry tomatoes, 1 stock cube, and 1 tbsp garam masala to a saucepan along with 2 cups cold water.
2. Simmer on low heat for 20 minutes, stirring occasionally to prevent sticking. If it starts to dry out, add a little extra water.
3. Turn off heat and allow to thicken for a couple of minutes. Serve with a wedge of lemon, fresh herbs, chilli flakes, and crusty bread.
