= Recipe
1. Bring a large pot of water to a boil. Cook 1 lb noodles (fresh or frozen) until barely tender, 5 minutes. Drain, rinse with cold water, drain again, and toss with a splash of sesame oil.
2. In a medium bowl, whisk together 2 tbsp sesame oil, 3.5 tbsp soy sauce, 2 tbsp Chinese rice vinegar, 2 tbsp Chinese sesame paste, 1 tbsp smooth peanut butter, 1 tbsp granulated sugar, 1 tbsp finely grated ginger, 2 tsp minced garlic, and 2 tsp chile-garlic paste or chile crisp (or to taste).
3. Pour sauce over noodles and toss to combine. Transfer to a serving bowl and garnish with 0.5 cucumber (peeled, seeded, and cut into thin 2-inch sticks) and 0.25 cup chopped roasted peanuts.
